About Mizuno Tanrenjo [Minamoto Akitada]

Founded in 1872, this is a workshop that forges Japanese swords and knives.
He also forges the Japanese swords presented to the winners of the All Japan Student Sumo Championship, including former yokozuna Wajima Seki and former ozeki Asashio Seki.
Mizuno Tanrenjo’s main product, cooking knives, are favored by many cooks both domestically and overseas.

A long single-edged knife for dissecting large tuna and cutting it into appropriate parts. Because it bends and breaks frequently, it is made to have a particularly sticky and supple cutting edge.
